Back!

...and unemployed! You can expect regular updates from now on as I've finally finished my university course and have plenty of time to cook delicious foods while I hunt for jobs.

I have a whole load of recipes to post that I've made over the last few months. They're generally simple, quick and really cheap because I've had no time or money this year. It's all damn tasty though. I'm starting this post with

"Egg" Fried Rice

  • 1 block firm tofu
  • 1-2tsp sesame oil
  • 1 tsp black Salt
  • 1 tsp turmeric
  • 2 cups rice, cooked
  • 2 tbsp vegetable oil
  • 1 bunch spring onions, chopped
The tip for good fried rice is to cook the rice in advance so that it's cold when you come to fry it. The rice should be cooked and drained at least a few hours in advance, but a day or two is always better.

If you don't have black salt you can replace it with regular salt, but black salt is better for giving the tofu a real 'eggy' taste.

  1. Drain and scramble the tofu.
  2. Add the sesame oil, black salt and turmeric to the tofu and set aside for 15 minutes.
  3. Heat the vegetable oil in a pan and add the scrambled tofu. Fry until golden and slightly crispy before adding the rice and spring onions.
  4. Fry for a few more minutes and serve.
Really simple and a really good replacement for the real thing. I've found that brown rice tends to work better than white for this recipe.
