It's really hard to convert cups to grams and oz because it depends on what you're putting in the cups. Found this useful link though, which should help you:

The other thing to try is that 1 cup is 250ml, so you could measure it all in a measuring jug.

I'm not at home to measure my baking tray, but it's about the size of a large roasting tin if that helps. Sorry if this is a bit useless and I hope it works out for you!
